SynthFlesh is an artificial organic substance that some Cybertronians use in conjunction with their Alt-Mode. It serves a dual purpose. First, it covers up the metallic frame of the cybertronian, and allows them to pass as organic. This is chiefly used in terms of organic based altmodes, allowing Cybertronian researchers (and occasionally spies) to approach organic creature for closer analysis. The second purpose of SynthFlesh is as a protective covering. the artificial organic tissue acts as protective coating, absorbing harmful Energon radiation in environments containing the substance in its natural and unstable form. This radiation can lead to a Cybertronian's overload, stasis lock, and eventual spark loss... so SynthFlesh is preferred when shielding is unavailable. It's cheaper too.
