Crusader Kings was originally released in the PAL format on August 27, 2004. The latest patch for vanilla Crusader Kings was the 1.05 version.

The expansion pack to it - Deus Vult (In the Name of) - was released on July 31, 2007. The most recent patched version for Deus Vult (commonly abbreviated DV) is CK: DV 2.1 Beta.

Basic information about Deus Vult

As DV builds upon and improves CK, including fixing many bugs and improving the interface usability, it is strongly recommended that players play DV immediately. For instance, one bug you'll see in a CK game without the expansion pack is that numerous Counts and Dukes may pledge vassalship to the King of England, even if they have no direct relationship to him in the evolving gamplay - however, in DV declarations of vassalship are more strongly tied to the titles one holds (ie, King of England, King of Sicily etc.)

It is also advised not to play old saved game files in newer updates of the game.

Further modifications

Also, note that most players play the latest edition of Deus Vult with the DVIP mod applied to it, which improves the game further. That's currently the most popular playable version of the game (although numerous other mods exist and new ones are always being worked on and tweaked).
