G-Modding, or God-Modding, is more or less breaking the rules of reality. It includes never dying, being able to dodge everything, killing everything in 1.5 seconds, blowing up the world, and doing debug mode stuff. It is usually frowned upon most serious businessmen such as YOSHI.
Danny interprets it differently, and uses this term to describe someone that partakes in any physical action that may take away from the screen time of his characters during one of his stories.
